   <abstract xml:lang="ru">
    <p>Проведен обзор публикаций по применению покрытий фруктов и ягод с целью сохранения их потребительских свойств. Нашими исследованиями установлено, что биополимерные пленки способствуют сохранению органолептических свойств свежих ягод клубники и малины. Показано, что покрытие ягод биополимерными пленками угнетают рост естественной микрофлоры, представителями, которых являются стрептококки, коринебактерии и дрожжи. Под биополимерными покрытиями мицелиальные грибы р. Mucor не обнаружены, что позволяет сделать вывод о фунгицидной активности и барьерных свойствах биополимерных пленок по отношению к мицелиальным грибам. </p>

   <trans-abstract xml:lang="en">
    <p>A review of publications on the application of coatings of fruits and berries in order to maintain consumer properties were analyzed. Our research has shown that biopolymer films perpetuate the organoleptic properties of fresh strawberries and raspberries. It is shown that the coating of berries biopolymeric films inhibit the growth of natural microflora, representatives of which are streptococci, Corynebacterium and yeast. Under biopolymeric coatings filamentous fungi g. Mucor not found, it can be concluded on the fungicidal activity and barrier properties of biopolymer films to the filamentous fungi.</p>
