   <abstract xml:lang="ru">
    <p>Ферментированные картофельные крахмалы, полученные с помощью амилолитических препаратов амилосубтилина (амилосубт) и Bacillus licheniformis (BL), в зависимости от времени модификации обладают различными технологическими и биологическими свойствами. Выявлено, что ферментированные крахмалы лучше снимают генотоксический эффект, чем нативный картофельный крахмал. Кроме того, ферментированные крахмалы (амилосубт-8 и BL-8) проявляют защитные свойства по отношению к молочно-кислым бактериям. </p>

   <trans-abstract xml:lang="en">
    <p>The fermented potato starches obtained by amylolytic preparations Amilosubtilin (amylo), and Bacillus licheniformis (BL), depending of modification time have different technological and biological properties. Revealed that fermented starches better remove genotoxic effect than native potato starch. Furthermore, fermented starches (amilosubt-8 and BL-8) exhibit protective properties respect to lactic acid bacteria.</p>
