Abstract (English):
It is shown by NMR relaxation methods, that during the centrifugation in case of intensive and(or) long enough impact of mechanical forces on the yeast preparation there take place not only the process of microbiological pellet concentration, but the saturation of intracellular yeasts space with a physiologically surplus quantity of а liquid (water) too, which leads to а partial cell walls damage and forthcoming yeast cells plasmolysis.
