Flow equations on an inclined surface of drop volumes of viscous fluids in a time are offered. Optimum test conditions of fats on a inclined plane reometre are selected. The boundary line of lengths of paths of a leakage of the butter fats matching to demanded of Reichert-Mejssl number is found. Correlation of Reichert-Meissl numbers of fats with their refractive indexes (40ºС) which can be used for revealing of adulteration of a butter is shown.
