Abstract (English):
Isolation, identification and study of biologically active substances of plant origin at a high level, started to be engaged in the XX century. The purpose of the work was to study the information on the structure, classification, content and applications of saponins. A distinctive feature of plants containing saponins lies in the ability of extracts to foaming in aqueous solutions, which defines the scope of their application. Saponins are highly toxic and various structure, therefore still not been sufficiently studied. Saponins are a diverse group of compounds widely distributed in the plant kingdom, which are characterized by their structure containing a triterpene or steroid glycosides and sugar chains. Saponins contained in plants of the family Ranunculaceae, Valerianaceae, Rosaceae, Theaceae, Araliaceae, Polemoniaceae, Primulaceae, Poligalaceae, Caryophyllaceae, Asparagaceae, Fabaceae, Lamiaceae, Asteraceae et al. Saponins are used in food, cosmetics and pharmaceutical sectors. This paper may be of use for those who study saponins as biologically active substances of plant origin.
