Abstract (English):
A review of publications on the application of coatings of fruits and berries in order to maintain consumer properties were analyzed. Our research has shown that biopolymer films perpetuate the organoleptic properties of fresh strawberries and raspberries. It is shown that the coating of berries biopolymeric films inhibit the growth of natural microflora, representatives of which are streptococci, Corynebacterium and yeast. Under biopolymeric coatings filamentous fungi g. Mucor not found, it can be concluded on the fungicidal activity and barrier properties of biopolymer films to the filamentous fungi.
