The article is devoted to the new requirements, which are regulated under the technical regulations of the customs Union TS TS 021/2011 «About safety of food production», namely the development and implementation of HACCP in the food enterprises of Russia. Analyzed the grounds for making such claims. The article describes in detail the steps for the implementation of HACCP and described the experience of implementation of HACCP in the Republic of Tatarstan.
